Occurrence: Chinese cinnamon (Cinnamomum cassia) or simply cinnamon cassia, is a tree from the Lauraceae family of plants. It can reach up to 10-15 meters in height. The leaves of cassia are 10-15 cm in length with an ovate shape and a pointy ending. They usually have a yellow color, while younger leaves can be red. Cassia leaves are longer and narrower than those of the Ceylon cinnamon tree that seems to be more popular in Europe. Yellow-green flowers are gathered in panicles and attached to the tree by long petioles. Cinnamon trees produce fruits in the form of a green drupe. 

Naturally, cinnamon cassia occurs in the Southern and South-Eastern parts of Asia. The first crops of this plant have been located in Southern China. Currently, on a larger scale, cassia is also cultivated in countries such as: India, Indonesia, Thailand and Vietnam.

Fun fact: In ancient Rome of the 1st century CE, cinnamon was about 15 times more valuable than silver. The reason for this was a high demand for this spice and its limited availability. After some time, new trade routes had been established which made cinnamon more widespread and its price significantly dropped.
